Baked Asparagus

Asparagus is a great addition to any dish in any season. This dish in particular is beautiful enough to be added to your holiday dinner and quick enough for a Monday after work last minute throw together!

If you have never cooked asparagus before, the first step is to get rid of the tough end. You do this by holding the middle of the asparagus with one hand and snapping the end of where ever it breaks. Align all your asparagus in your baking sheet side by side, overlapping is ok, but position the head of the stalks the same way. Then half your tomatoes and put in an open corner of your baking sheet. Drizzle the asparagus and tomatoes with olive oil, then generously sprinkle with salt and pepper.

While that cooks for 10 minutes, cut your red onion into circles or even better use your Colella Farms Pickled Red Onions (RECIPE HERE). Whatever option you choose, add for the last 5 minutes with the mozzarella cheese and let it melt!

Serve on a platter by placing asparagus on the bottom, tomatoes on top, then onion. ENJOY!

RECIPE:

Ingredients:

  • 20-30 Asparagus spears

  • 15 cherry tomatoes

  • 1/2 red onion

  • 1/2 cup shredded mozzarella

  • Olive Oil

  • Salt & Pepper

Equipment:

  • baking sheet

  • cooking spray

  • serving platter

Directions:

  1. Pre-heat oven to 400F

  2. Break the ends off of the asparagus spears.

  3. Spray the baking sheet and line up the asparagus on the baking sheet off to one side

  4. Slice cherry tomatoes in half and place in the corner of the baking sheet. You should have one corner open.

  5. Drizzle the asparagus and tomatoes with olive oil and sprinkle with salt and pepper.

  6. Place in the oven for 10 minutes

  7. In the meantime slice the onions in rounds, or use pre-made pickled onions.

  8. Remove the dish from the oven, sprinkle cheese on top of asparagus. Add the onions to the open corner of the baking sheet.

  9. Put back into the oven for 5 minutes.

  10. Remove from the oven.

  11. Transfer the asparagus to a serving dish, top with tomatoes then onions. Serve immediately!

Notes:

  • Asparagus can be substituted for green beans
