Baking Powder Biscuits
These biscuits are quick and easy for any morning, they take only 5-10 minutes to mix and 12 minutes to cook and minimum dishes!
I started making these when my kids were really little as they are really soft for a baby to eat with their hands, then I evolved to a serving butter knife. You know the ones that come with your cutlery set but sit in your drawer. Then I moved them up to a regular butter knife! So this recipe is pretty nostalgic as well (tears rolling down my face).
The most important thing to remember about this recipe is to not over stir. You want to just combine all the flour, nothing more. Keep the left over biscuits in the fridge for 5 days, or freeze right away in a freezer safe container for up to 6 months. Defrost in the morning on the counter or in the microwave/oven.
I like to serve them with butter and jam, but now with our abundance of eggs, I also do some over easy eggs to dunk into! ENJOY!

RECIPE:
Ingredients:
2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup avocado oil
1/2 cup coconut milk
Equipment:
Large Bowl
Wooden Spoon
Muffin tray
liners
Directions:
Pre-heat the oven to 375 F
Put flour, sugar, baking powder and salt into a bowl, and stir
create a well in the dry ingredients
In the well crack eggs and pour in oil and milk.
Poke the eggs with your spoon, then stir just until all flour is combines
line a muffin tray with liners
Divide the dough into equal parts, each section will be quite full as they do not rise very much.
Serve with homemade jam and butter or a sunny side up egg
Notes:
Vegan option- replace egg with applesauce
Do not over stir
Freeze individuall for up to 6 months
