Chicken Caeser Wrap

This is the greatest way to turn your side caeser salad into a full meal. This one makes the meal plan every couple of weeks especially when I need to use some left over salad dressing or we need a quick week day meal to get to an activity. Its a little messy for on the go, but only takes a few minutes to put together and eat up!

I like to use left over rotisserie chicken for the protein, or for a real quick solution you can buy pre-cooked crispy chicken that makes these wraps extra delicious.

You can use any salad dressing for this but I always make my own with this recipe: Colella Farms Caeser Salad Dressing

RECIPE:

Ingredients:

  • 1 cup Pre-cooked chicken of choice

    1/2 cup caeser dressing

    4 large wraps or soft tortillas

    1 head of romaine lettuce

    hand full of croutons (optional)

Equipment:

  • Knife & cutting board

Directions:

  1. Cut the chicken into strips or chunks, warm if desired

  2. Lay wraps or tortillas flat on your work surface.

  3. Put 2-3 full leaves of lettuce on your wrap/tortilla.

  4. Add chicken and croutons on top of lettuce.

  5. Drizzle 2 TBSP of dressing on top of your lettuce/chicken pile.

  6. Wrap up tight, cut in half and enjoy!

Notes:

  • For the chicken I often use left over rotisserie chicken or chicken cutlets. If I do not have any leftovers I use pre-cooked crispy chicken strips. The idea is a fast, during the week meal!

    If your using Colella Farms caeser dressing recipe your dressing gets thicker over time. Add a little extra oil, vinegar or lemon juice to thin out or enjoy extra thick!.
