Pickled Red Onions
These pickled onions are my all time favorite to add some color and tang to any dish. They can last in the refrigerator for 6 months, but they don’t last that long in my house.
Usage ideas:
Baked Asparagus
Spinach salad
on eggs
on pizza
on chicken

RECIPE:
Ingredients:
2 Medium red onions
1 Tbsp salt
1 1/3 cup balsamic vinegar
2 2/3 cup white vinegar
Equipment:
Mandolin
32 oz wide mouth jar
Directions:
Slide onions into rounds
Place them into a wide mouth jar
Add salt into jar
Fill jar 1/3 of the way with balsamic vinegar
Fill the remainder of the jar with white vinegar
Shake well
Notes:
Store in the fridge
Good for 6 months
