Pickled Red Onions

These pickled onions are my all time favorite to add some color and tang to any dish. They can last in the refrigerator for 6 months, but they don’t last that long in my house.

Usage ideas:

  • Baked Asparagus

  • Spinach salad

  • on eggs

  • on pizza

  • on chicken

  • ENDLESS POSSIBILITIES

RECIPE:

Ingredients:

  • 2 Medium red onions

  • 1 Tbsp salt

  • 1 1/3 cup balsamic vinegar

  • 2 2/3 cup white vinegar

Equipment:

  • Mandolin

  • 32 oz wide mouth jar

Directions:

  1. Slide onions into rounds

  2. Place them into a wide mouth jar

  3. Add salt into jar

  4. Fill jar 1/3 of the way with balsamic vinegar

  5. Fill the remainder of the jar with white vinegar

  6. Shake well

Notes:

  • Store in the fridge

  • Good for 6 months
