One Pot Tomato Zucchini Pasta

Who doesn’t love a one pot dish! Some how there is still always dishes, but it helps a little bit. We eat pasta basically every Sunday, so I throw this recipe into the mix every once in a while as an alternate to sauce and meatballs. Especially on a cold day, this dish will warm you right up.

The zucchini can be fresh or frozen, in the pictures below I am using frozen zucchini grown in our garden. I still have 12 cups frozen in the freezer! Because some zucchini is wetter than others you may need additional broth, add more if you the pasta is thickening the sauce to much.

You can add whatever protein you choose. I often cook this with ground chicken. Since it is lean you can cook it right in the pot. If you are choosing ground beef, I suggest cooking in a separate pan and adding right before serving. Another alternative is to mix in some spinach right before serving.

Whatever option you choose, serve with parmesan cheese, or a dairy free alternative. I also like mine with a sprinkle of red pepper flakes for a little kick. Make sure you remove the bay leaf before serving, you do not want to eat it!

RECIPE

Ingredients:

  • 4 Cups Zucchini (approx: 2 Fresh)

  • 32 Oz whole tomatoes

  • 3 Cups Broth of choice

  • 1 Lb Pasta of choice

  • 1 Onion

  • 2 Cloves of Garlic

  • 1 Bay Leaf

  • 1 TBSP Olive Oil

  • Ground chicken (Optional)

  • Salt & Pepper to taste

Equipment:

  • Large pot

  • Knife & cutting board

  • Cheese grater or vegetable shredder

Directions:

Chop onion to desired size.

  1. Heat olive oil in a large pot.

  2. If adding ground chicken, cook thoroughly in pot, otherwise skip to step 4..

  3. Put garlic and onion in pot, cook until translucent.

  4. Add whole tomatoes including juice, bay leaf and salt and pepper.

  5. While the pot simmers, shred zucchini using cheese grater or vegetable shredder.

  6. Add zucchini immediately into pot, keeping all the juice.

  7. Using a spoon, squish the whole tomatoes until they become smaller chunks.

  8. Add broth of choice to the pot and bring to a boil.

  9. Once the sauce comes to a rolling boil add pasta.

  10. Cover and cook to desired tenderness.

  11. Serve with parmesan cheese or DF alternative!

Notes:

  • You can always cook your desired meat outside of the pot, or use left overs on top.

  • Add extra broth if your sauce becomes to thick.
