Cloud Eggs

If you eat eggs as much as our household, you need some variety. These eggs are a good option when you need to switch it up every once and a while.

Meringue the egg whites can be a little bit of an art. If you over beat them then it will be very stiff and hard to make the holes for the yolks. But under beating them will also not hold up while baking. So, make sure you stop right when the peaks start to form.

The toppings are the best part of this recipe. I love adding everything bagel seasoning on the top of mine. But it's also good with some cheese, bacon and chives. Or really anything else you can possibly think of.

RECIPE:

Ingredients:

  • 4 Eggs

  • Topping of choice

Toppings:

  • Everything Bagel Seasoning

  • Bacon

  • Cheese

  • Chives

Equipment:

  • Hand mixer

  • 4 small dishes

  • Large bowls

  • Baking tray

  • Cooking spray

Directions:

  1. Preheat oven to 350 F

  2. Spray the small dishes with cooking spray

  3. Separate the egg yolks from the whites. Put all the whites in a large bowl and the yolks in separate small dishes.

  4. Using a hand mixer beat the egg whites on low and get progressively higher until you reach max speed. Beat for 2-3 minutes on high until stiff peaks are formed.

  5. Using a spoon separate the meringue into 4 equal parts onto a sprayed baking sheet.

  6. With the back of the spoon make a hole in the whites big enough to fit the yolk.

  7. Put in the oven for 3 minutes

  8. Remove from the oven, pour in egg yolk very carefully not to crack

  9. Add topping of choice

  10. Put back into the oven for another 3 minutes.

  11. Remove from oven and serve hot
