Cilantro Lime Dressing

This recipe was inspired by buying a giant bag of limes from Costco! I started with only 2 limes, but 3 is definitely the best. The recipe is nice and tangy while still giving you the powerful taste of cilantro. 

I enjoy this dressing on a fresh garden salad, or as a dip for rotisserie chicken or steak kabobs. My kids love it on top of cucumbers!

The flavors intensify the next day, so day 2 is ultimately the best, but still great day 1. This recipe uses a raw egg so if you are not comfortable, cook the egg in the microwave and blend thoroughly in dressing.

RECIPE:

Ingredients:

  • ¾ Cup Oil

  • 1 egg

  • 4 TBSP Cashews

  • 4 TBSP Apple Cider Vinegar

  • Juice of 3 Limes

  • 3 tsp Cilantro

  • 1 tsp Garlic Powder

  • ½ tsp Onion Powder

  • Salt & Pepper to taste

Equipment:

  • 16 Oz jar with lid

  • Immersion blender

Directions:

  1. Combine all ingredients into a large jar or tall container

  2. Using an immersion blender, blend until July combined

  3. Store in the fridge for up to 7 days

Notes:

  • Soak the cashews in the vinegar for 10 minutes to soften
